  • 1 cup rice flour
  • 1/4 cup coconut milk
  • 1 egg
  • 1/4 teaspoon turmeric powder (optional, for color)
  • 1/4 teaspoon salt
  • Oil for deep frying

Kitchen Tools Needed:

  • Kokis mold (traditional iron mold)
  • Deep frying pan
  • Whisk or spoon

Instructions:

  1. In a mixing bowl, combine rice flour, coconut milk, egg, turmeric powder, and salt. Whisk together to form a smooth batter with a pancake-like consistency. Add water if necessary.
  2. Heat oil in a deep frying pan. Submerge the kokis mold in the hot oil to preheat it.
  3. Once the mold is hot, dip it into the batter, ensuring the batter coats the sides without covering the top.
  4. Immediately place the batter-coated mold into the hot oil. Fry for a few seconds until the kokis loosens from the mold.
  5. Let the kokis fry until golden brown and crispy. Remove from oil and drain on a paper towel.
  6. Repeat the process until all the batter is used.
